Cooling Hot Temps With A Cool & Crisp Salad

Well summer has officially arrived which means its the start of salad season! To start things off on the right foot I thought I would whip up a tasty salad we had last time we were down in Walt Disney World - the Cobb Salad from The Hollywood Brown Derby. This one of our favorite restaurants in Disney’s Hollywood Studios and all of WDW for that matter. They have a great menu for both food and drinks and the atmosphere is hard to beat with caricatures of famous celebrities lining the walls and art deco accents thru out you feel like your in old Hollywood.

Now I’m sure you have seen cobb salad recipes all over the place and I’m sure they are all good but I like to make this one as it not only satisfies the rumbly in my tummy but it brings some of that Disney Magic home and who doesn’t want that? Although this is pretty simple to pull together there is a ton of prep meaning you and your knife are going to be busy.

Recipe Sidenotes

A couple notes about the more unique ingredients in this recipe - Chicory Leaves - now this sounds really exotic but its a pretty common lettuce to find. Sometimes its called Radicchio or Curly Endive and you will most likely find it in the bulk lettuce area of your local store next to the bunches of spinach and kale. The other more unique lettuce is Watercress - I found this near the bagged lettuce at my local stores but I have also seen it by the bulk lettuce area as well.

The Hollywood Brown Derby Cobb Salad

  • 1 cup chopped iceberg lettuce leaves
  • 1 cup chopped chicory leaves
  • 1 cup tender sprigs of watercress
  • 1 pound turkey breast, chopped
  • 2 medium-sized, ripe tomatoes, seeded and finely chopped
  • 1 avocado, finely chopped
  • ½ cup crumbled blue cheese
  • 3 hard boiled eggs, peeled and finely chopped
  • 2 tablespoons snipped fresh chives

  • 2 tablespoons red wine vinegar
  • ½ teaspoon Worcestershire sauce
  • 1 clove minced garlic
  • 1/8 teaspoon of freshly ground black pepper, or to taste
  • 1/3 cup vegetable oil
  • 2 tablespoons olive oil

The Process

Step 1

As should be the first step in any recipe get your "mise en place" going and gather up all the ingredients. While I was hard boiling the eggs and cooking the bacon (I used microwave bacon because I hate making it on the stovetop) I worked on chopping up all the ingredients. The key to making this like The Hollywood Brown Derby does is to chop all the lettuces really fine. I mixed up the chopped lettuces together in a bowl then worked on the all the other ingredients placing them in separate bowls as I went. This is great way to serve the salad buffet style just set out plates and let everyone assemble their own!

Step 2

Make the dressing! In a small bowl whisk together the water, red wine vinegar, lemon juice, Worcestershire sauce, salt, garlic, sugar, pepper and dry mustard until well blended. Then continue whisking and slowly pour in the vegetable oil and olive oil creating an emulsified dressing.

Step 3

Assemble your salad! Grab a plate or low bowl and place in a good handful of the lettuce mixture. Then making separate lines arrange each of the other ingredients on top of the greens. Pour some of the dressing over the salad and your all set to go!
