Well here we are its April 9th and guess what? It's snowing! Yes you read that right. Springtime in Minnesota at its finest. Which means I am in need of a little Disney pick-me-up. So tonight we're having Mama Melrose's Penne Bolognese. Because when its April and its snowing pasta sounds like the prefect dinner.

Mama Melrose's Ristorante Italiano is located in the backlot of Hollywood Studios. Full of cozy booths, red and white checked curtains and the wonderful aroma of a wood-burning oven. This is the quintessential Italian restaurant that you see in movies. They serve a range of Italian dishes from pasta to flatbreads and even gelato for dessert.

Mama Melrose’s Penne Bolognese

Ingredients

  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 2 Medium Carrots, Diced (about 1 cup)
  • >1 Medium Onion, Diced (about 1/2 cup)
  • 1/4 lb Hot Italian Sausage
  • 1/4 lb Sweet Italian Sausage
  • 1/2 lb Ground Beef
  • 1/2 Cup Dry Red Wine
  • 3 28-oz. cans of pear-shaped tomatoes, drained and chopped
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Oregano
  • 1 lb Penne Pasta
  • Fresh Grated Parmesan for garnish

The Process

Step 1

As should be the first step in any recipe get your "mise en place" going and gather up all the ingredients. Heat the olive oil and butter in a heavy saucepan or similar apparatus over medium-high heat (I like my dutch oven for this). Sauté the carrots and onions until onions are translucent and carrots have soften a bit (about 5 mins). Then stir in the sausage and ground beef. Cook over medium heat until meat is done then drain the mixture. To the drain the mixture I just place a few paper towels on a plate and dump it on that then pat dry with a few more paper towels. After draining return mixture to the pan.

Step 2

Stir in the dry red wine and heat to boiling. Reduce the heat and simmer uncovered until some of the wine has evaporated. Then stir in the tomatoes, salt, pepper and oregano, and heat again to boiling.

Step 3

Reduce heat. Cover and simmer for 45 minutes, stirring occasionally.

Step 4

Meanwhile while the sauce is simmering get a pot of water boiling and cook the penne according to the directions on the box. Drain and set aside. Once the sauce has simmered for 45 minutes and is making your house smell amazing toss the pasta with the sauce. Garnish with parmesan and your ready for a delicious pasta dinner!
