Keebler Fudge Cookie Salad

This cookie salad has lurked the tables of many a Lutheran potluck over the years. I don’t know if it’s just a Minnesotan thing or maybe a midwestern thing but it’s the one dish I could always count on filling a good portion of my plate at a potluck. Perhaps it’s always there because it’s so quick and easy to make or maybe because it’s in the church by-laws. "One bowl of Keebler Fudge Cookie Salad must be present at all potlucks here fourth from this day." Who knows? I just know that its something that I will always remember from my childhood not only from church potlucks but from dessert at home as well.

Keebler Fudge Cookie Salad

Ingredients

  • 2 Cups Buttermilk
  • 2  Packages Vanilla Instant Pudding (3.4 oz size)
  • 1 Container Cool-Whip, thawed (12 oz size) 
  • 2 Cans Mandarin Oranges, drained well (11 oz size) 
  • 1 Package Keebler Fudge-Striped Cookies, crushed (11.5 oz size)

The Process

Step 1

In large bowl mix together the 2 cups of buttermilk and the 2 packages of vanilla instant pudding.

Step 2

When the pudding is well mixed fold in the container of Cool Whip.

Step 3

Make sure that your mandarin oranges are well drained and that you cookie pieces are nice and crushed (I just smash the package together in-between my hands it seems to do the job). I like to leave out a few oranges and a handful of cookies for garnish and then add the rest to the pudding/cool-whip mixture. Gently stir in the cookies and madras oranges. Garnish the top with the orange and cookie pieces if you left some of those out. If you are not serving this right away refrigerate it until its time. Otherwise dish up a bowl and enjoy this tasty cookie salad!
