Cheesy, Crunchy, Spicy, What's Not to Love?

Now these little delightful nuggets are an apdation of a recipe that I have been making for years. It has been a go to recipe when I want some cheesy comfort food and don't really feel like cooking. Which means it's easy and delicious! Now its not necessarily your traditional Chicken Enchilada recipe being that theres no traditonal enchilada sauce and no corn tortillas but with that being said I don't think you'll will be disappointed. It's still cheesy and spicy at the same time and quick to pull together.

Traditionally I have made these like you would normal enchiladas by rolling the chicken mixture in tortillas, placing them in a 9 x 12 dish, then smothering them in enchilada sauce and of course cheese. Well one afternoon I had buzzed over to the bed bath and beyond and bought myself a gorgeous new 12 cup muffin pan. I was pretty excited to use it however the thought of making cupcakes or muffins wasn't sitting well with me and I knew I had to get dinner together soon.

I had a "lightbulb" moment.

What if I use this new nifty muffin pan while making dinner?!?

Well it worked and this is the result prefect little Chicken Enchilada Bites that you, your kids and guests will love. Because who doesn't love finger food? Well Jason because he doesn't like his hands being dirty but that's a different story for another time...

Anyways these are the prefect little bites to serve for dinner or appetizers at your next party. Best of all these freeze pretty well too! Just freeze them in layers with wax paper between. When your ready for some cheesy goodness preheat your over to 375°, grab them from the freezer, throw them on a baking sheet and bake them until warm about 20 mins. And Boom! You have prefect little cute Chicken Enchilada Bites for all to enjoy.

Chicken Enchilada Bites


  • 1 Yellow Onion, Dice
  • 2-4 Cloves of Garlic, Minced
  • 1 Jalapeño, Seed and Diced
  • 2-3 Chicken Breasts, Shredded
  • 2 Cups of Mexican Blend Cheese or Cheddar Cheese, Shredded
  • 1 16oz Jar of Salsa Verde
  • 1 4oz Can of Diced Mild Green Chilies, Drained
  • 1 Package of Burrito Size Flour Tortillas
  • Chopped Cilantro for Garnish

The Process

Step 1

Get your chicken ready. You could use leftover chicken, a rotisserie chicken you purchased or bake up some chicken to use. I didn’t have leftover chicken so I baked some up. I placed the chicken in a glass 8x8 pan, sprinkled them generously with salt and pepper, added a little water and baked them in a 350° until done, about 25 mins.

Step 2

Preheat the good ol’ oven to 375°. Grab a bowl or other apparatus (I used the 8x8 pan I baked the chicken in) and mix together the shredded chicken, onion, garlic, jalapeño, 1 cup of cheese, jar of salsa and the green chilies.

Step 3

Grab your tortillas and cut them into 4’s creating cute little wedges. I used a pizza cutter which worked really well but you could also use a knife. Once you got the tortilla cut up take one wedge and place it into the muffin cup creating a cup of sorts. Continue this until you fill the pan. Then spoon in the chicken mixture into all the cups (you want them to be pretty full). Top with cheese and pop them into the oven.

Step 4

Bake the Enchilada Bites uncovered until the cheese is melted and everything is heated thru about 20 mins. Sprinkle with the chopped cilantro and serve! If you are making a dinner out of these I would recommend serving them with Mexican Rice and of course a prefect margarita.
